Corn Bean Salad Recipe

corn bean salad

Try this instead of nachos!

Makes six servings


  • 2 cans of black beans
  • 2 cans of sweet corn (2 ears of sweet corn, when available)
  • 2 tomatoes
  • 1 bell pepper
  • ¼ cup finely chopped cilantro
  • Juice of a lime or 3 tbsp vinegar
  • ¼ cup extra virgin olive oil
  • ⅛ tsp cayenne
  • Optional: avocado, onion or garlic
  • Salt to taste


  1. Open, rinse, and drain black beans and corn, put in bowl
  2. Toss diced tomatoes and bell peppers in bowl
  3. Add in cilantro, oil, vinegar, cayenne, salt (and optional ingredients if desired)
  4. Toss with big spoons to mix
